Cool and Easy Fruit Salad

1 ea banana, Gala or Golden Delicious apple, mango
3 kiwis
1 c. ea sliced strawberries and seedless grapes
1 sm. can tidbit pineapple, drained
2 cartons Yoplait fruit-flavored yogurt
 
Slice banana and mango; chop apple. Combine all ingredients in a large bowl. Chill before serving.
 
For variety, you  might want to add shredded coconut, pecans or almonds. My favorite flavors of yogurt for this dish are Strawberry Banana and Harvest Peach. Raspberry Peach Melba is also good.
 
Save the pineapple juice for the next one!

Juice Spritzers

Freeze the leftover pineapple juice in ice cube trays. For each drink, combine 8 oz. seltzer or club soda with 2 oz. white grape juice. Add 1 or 2 pineapple ice cubes along with some plain ones. Take your cool drink to the porch swing or hammock and enjoy ;-)

Victorian Cucumber Sandwiches

No, these aren't made from Victorian cucumbers ;-)
 
1 French or sour dough bagette
1 large cucumber
1/4 c. tub margarine
1/2 tsp. Gulden's Spicy Brown Mustard
Dash of curry powder to taste
 
Wash cucumber and skin it with a vegetable peeler, leaving part of the skin so that it forms alternating bands of light and dark green. With a very sharp knife, slice the cucumber paper thin and place slices on paper toweling to drain. Set aside.
 
Combine margarine, mustard and curry powder in a small bowl and mix well.
 
Slice bread into 1/4" slices. Spread lightly with margarine mixture and make sandwiches with 3 - 4 cucumber slices per sandwich.
 
A nice variation of this idea is to use freshly chopped herbs and finely minced garlic instead of mustard and curry powder. You might also want to use very thinly sliced ham or roast beef with either 'butter' instead of cucumber. You might also live on the edge and use it all!
